Gamberi Al Vino Bianco (Prawns with white wine)

This Italian dish of prawns with white wine, is perfect for whipping up in a Vancouver kitchen. Homegrown ingredients like prawns from B.C’s waters and wine from the valley make this a West Coast classic.

In the summer time you can serve this with pasta or rice, or with bread and a salad. For a heavier meal in the winter time, change out the sides to mashed potatoes and steamed vegetables.

Ingredients

2 tablespoons butter

¼ cup Greek olive oil

2 tablespoons finely chopped onions

1 teaspoon finely chopped garlic

1 teaspoon finely diced jalapeños

1 cup diced tomatoes

1 tablespoon tomato paste

2 cups white wine

12 large prawns, raw and in shell

½ cup roughly chopped parsley

Instructions

Heat butter and olive oil in a medium saucepan over low heat.
Add the onions and cook until soft.
Add the garlic and cook for an additional 2 minutes.
Add the tomato paste, jalapeños and tomatoes, stir well and continue to cook gently.
Pour the 2 cups of wine into the pan and bring to a simmer. Continue cooking until the liquid is reduced to half the amount.
Add the prawns, cook for 1 minute, remove from heat and let it rest for 2 minutes.
Pour into a bowl and top with the chopped parsley.
Serve with pasta of your choice, 2 crusty baguettes and a large garden salad.

Notes

Great with pasta or rice. Or for a lighter meal, serve with french bread and a salad.
