For me, baking is not a science, I create based on flavours quite often, but not everyone can do that…and to be honest, not every creation is a vast success. There is always a way to repurpose a dessert that may have gone horribly wrong…that is if there are good flavours in it to begin with, and it was not burnt to a crisp.

Save yourself buying expensive desserts when you are hosting a dinner party, on the other hand, impress your guests with this dessert you literally throw together.

For this dessert, I suggest you make a batch of muffins (on the firmer side, crumbly works too), the more texture to play with, the better for the overall success of the dish. Think textures and temperatures for this one.

The cake is basically an apple muffin, some vanilla ice cream we all keep around, a dollop of double Devon cream, a few berries and a sage leaf. Oh yeah, and a quick butter and brown sugar melt.

Ingredients

4 firm apple muffins baked with chunks of cinnamon-rolled apples

½ cup brown sugar and ½ cup butter (gently melted together on low heat)

4 strawberries

2 cups mixed berries (blackberries, raspberries)

4 teaspoons double Devon cream

4 scoops vanilla ice cream

8 sage leaves

Instructions

Break apart one muffin and place into a wide dessert bowl.

Slice one strawberry and arrange on the side, top with the cream and one sage leaf.

Scatter berries in the bowl.

Pour ¼ the hot butter sauce into the middle of the muffin, top with a scoop of ice cream and one sage leaf.

Serve immediately.

Notes

All it takes are a few berries and a scoop of ice cream, and a sage leaf or two to elevate the humble muffin into this smashed apple cake dessert. Impress with this fast and easy creation
